2 | large Vidalia onions, about 1 pound, cut into ¼ inch rings |
2 | large eggs beaten |
1 cup | milk |
1 box | Shore Lunch® Cajun Style Fish Breading/Batter Mix |
4 cup | vegetable oil for frying |
Heat the oil in a large saucepan to 350 °F.
Pour the eggs and the milk into a large shallow dish and whisk to combine.
Place the Shore Lunch® Fish Breading Mix Cajun Style into a large shallow dish.
Separate the onions into rings.
Dredge the rings into the breading mix, then the wet mixture, and then back into the breading mix.
Working in batches, carefully add the onion rings to the oil and fry for 2-3 minutes.
Using a slotted spoon turn the onion rings and continue to fry until golden brown. Carefully remove the rings from the oil and place onto a plate lined with paper towels.
Serve immediately with your favorite sauce.
