4 cup | vegetable oil for frying |
1 cup | buttermilk |
2 | large eggs, beaten |
1 box | Shore Lunch® Cornmeal Recipe Fish Breading Mix |
1 cup | all-purpose flour |
½ tsp | baking soda |
½ tsp | black pepper |
⅓ cup | minced green onion |
½ cup | grated Parmesan cheese, optional |
2 Tbsp | freshly chopped parsley, optional |
Heat the oil in a large saucepan to 350 °F.
Pour the buttermilk and the beaten eggs into a shallow dish and whisk to combine.
Combine the Shore Lunch® Cornmeal Recipe, flour, baking soda, black pepper, and green onions in a medium sized mixing bowl.
Slowly pour in the buttermilk and eggs into the dry ingredients and stir with a rubber spatula.
Let the mixture rest for 5 minutes.
Carefully drop tablespoon sized balls of batter into the oil, 6-8 at a time. Fry for 6 minutes, turning once until hush puppies are golden brown.
Remove the hush puppies from the oil using a slotted spoon and place onto a paper towel lined plate.
Repeat with the remaining batter.
Plate the hush puppies and sprinkle with the Parmesan cheese and fresh parsley.
