Fried Asparagus with Garlic Aioli

| ½ cup | Mayonnaise |
| 2 Tbsp | Milk |
| 1 Tbsp | Minced garlic |
| 2 Tbsp | Freshly chopped parsley |
| ½ tsp | Kosher salt |
| ½ tsp | Black pepper |
| 1 pkg | Shore Lunch Original Recipe Fish Breading/Batter Mix |
| ½ tsp | Cayenne pepper |
| ½ tsp | Black pepper |
| 4 cup | Vegetable oil |
| 1 lb | Asparagus, trimmed |
| 3 | Large eggs, beaten |
Heat the oil in a large stock pot to 350 ºF.
Combine the breading, cayenne pepper, and black pepper in a shallow dish.
Add the eggs to a shallow dish.
Dip each asparagus spear in the eggs and then dredge each piece in the breading. Place the asparagus onto a baking sheet until ready to fry.
Carefully add the asparagus, in batches, to the oil and fry for 1-2 minutes.
Using a slotted metal spoon remove the asparagus from the oil to a platter lined with paper towels.
Whisk the mayonnaise, milk, garlic, parsley, salt, and pepper in a small mixing bowl. Serve immediately with the asparagus.
