2 | boneless, skinless chicken breasts |
½ cup | buttermilk |
1 box | Shore Lunch® Spicy Buffalo Style Chicken Breading Mix |
6 | buns, cut in half and toasted |
6 slice | cheddar cheese |
3 piece | leaf lettuce torn in half |
2 | Roma tomatoes, sliced into ¼ inch slices |
2 cup | vegetable oil for frying |
Place the chicken breasts onto a cutting board and cut each breast into 3 equal pieces.
Pound each chicken slice into ¼ inch pieces.
Place each piece of chicken into a shallow dish and cover with the buttermilk.
Heat the oil in a large saucepan to 350 °F.
Add the Shore Lunch® Chicken Breading Mix to a shallow pan.
Remove the chicken from the buttermilk and dredge each piece into the breading mix.
Carefully add the chicken pieces, in batches, to the oil. Fry for 3-4 minutes each. Repeat with the remaining chicken.
Using long handled tongs remove the chicken from the oil to a plate lined with paper towels.
To assemble the sandwiches place a piece of leaf lettuce onto the bottom of each bun. Add a piece of fried chicken, add the cheese, tomato and the top bun. Serve immediately.
