|1 pkg||Shore Lunch® Tortilla Soup Mix|
|⅓ cup||vegetable oil|
|6 oz||ground beef chorizo|
|1 cup||diced yellow onions|
|1 Tbsp||minced garlic|
|3 cup||shredded cooked chicken|
|1 can||Bush's® Black Bean (15 oz), drained and rinsed|
|4||(6 inch) tortillas cut into ¼ inch strips|
|1 cup||frozen yellow corn, thawed|
|1 Tbsp||chopped pickled jalapenos|
|½ cup||chopped cilantro|
|⅓ cup||diced green onions|
Add the oil to a large sauté pan over medium high heat. Add the chorizo and onions and sauté for 4-5 minutes stirring constantly. Add the garlic and sauté for 30 seconds.
Add the chicken, soup, black beans, and water to the pan and simmer for 20 minutes, stirring constantly.
Add the tortillas and corn to the pan and continue to simmer for 5 minutes.
Remove the pan from the heat and stir in the jalapenos, cilantro, and green onions. Serve immediately.
