
Minestrone with Meatballs

1 lb | thawed ground beef |
1 | egg |
1 Tbsp | ketchup |
1 Tbsp | finely chopped onion |
¾ cup | plain breadcrumbs |
2 tsp | dried parsley |
½ tsp | salt |
¼ tsp | pepper |
1 pouch | Shore Lunch® Minestrone Soup Mix |
1 can | tomato paste |
1 can | petite diced tomatoes |
In a medium bowl, mix ground beef, egg, ketchup, onion, breadcrumbs, parsley, salt and pepper.
Form about 12 (1½-inch) meatballs; set aside on a small, parchment lined baking sheet cover and refrigerate.
In a large pot, boil 7 cups water, whisk in dry soup mix, tomato paste and diced tomatoes; reduce heat to medium.
Place meatballs evenly into soup mixture, cover and simmer over low heat for 25 minutes or until done, stirring gently.
