Minestrone with Meatballs

|1 lb||thawed ground beef|
|1 Tbsp||finely chopped onion|
|¾ cup||plain breadcrumbs|
|2 tsp||dried parsley|
|1 pouch||Shore Lunch® Minestrone Soup Mix|
|1 can||tomato paste|
|1 can||petite diced tomatoes|
In a medium bowl, mix ground beef, egg, ketchup, onion, breadcrumbs, parsley, salt and pepper.
Form about 12 (1½-inch) meatballs; set aside on a small, parchment lined baking sheet cover and refrigerate.
In a large pot, boil 7 cups water, whisk in dry soup mix, tomato paste and diced tomatoes; reduce heat to medium.
Place meatballs evenly into soup mixture, cover and simmer over low heat for 25 minutes or until done, stirring gently.
