Minestrone with Meatballs

1 pouch | Shore Lunch Minestrone Soup Mix |
1 lb | Thawed ground beef |
1 | Egg |
1 Tbsp | Ketchup |
1 Tbsp | Finely chopped onion |
¾ cup | Plain breadcrumbs |
2 tsp | Dried parsley |
½ tsp | Salt |
¼ tsp | Pepper |
1 can | Tomato paste |
1 can | Petite diced tomatoes |
In a medium bowl, mix ground beef, egg, ketchup, onion, breadcrumbs, parsley, salt and pepper.
Form about 12 (1½-inch) meatballs; set aside on a small, parchment lined baking sheet cover and refrigerate.
In a large pot, boil 7 cups water, whisk in dry soup mix, tomato paste and diced tomatoes; reduce heat to medium.
Place meatballs evenly into soup mixture, cover and simmer over low heat for 25 minutes or until done, stirring gently.
