|1 cup||Shore Lunch® Cornmeal Recipe Fish Breading Mix|
|2 cup||frozen sweet yellow corn, thawed|
|2 Tbsp||freshly chopped cilantro|
|2 Tbsp||diced green onions|
|2 Tbsp||minced Serrano pepper, seeds removed|
|2||large eggs, beaten|
|4 cup||vegetable oil|
Heat the oil in a large stock pot to 350 ºF.
Add the breading, corn, cilantro, green onions, Serrano pepper, eggs, and milk to a large mixing bowl. Stir to combine.
Carefully add the batter to the oil by the tablespoon, fry in batches for 2-3 minutes. Using a slotted metal spoon remove the fritters from the oil to a platter lined with paper towels. Serve immediately.
