1 cup | Shore Lunch® Cornmeal Recipe Fish Breading Mix |
2 cup | frozen sweet yellow corn, thawed |
2 Tbsp | freshly chopped cilantro |
2 Tbsp | diced green onions |
2 Tbsp | minced Serrano pepper, seeds removed |
2 | large eggs, beaten |
⅓ cup | milk |
4 cup | vegetable oil |
Heat the oil in a large stock pot to 350 ºF.
Add the breading, corn, cilantro, green onions, Serrano pepper, eggs, and milk to a large mixing bowl. Stir to combine.
Carefully add the batter to the oil by the tablespoon, fry in batches for 2-3 minutes. Using a slotted metal spoon remove the fritters from the oil to a platter lined with paper towels. Serve immediately.
