Bananas on a Stick

1 cup | Shore Lunch Original Recipe Fish Breading/Batter Mix |
5 | Bananas, peeled and quartered |
1 | Large egg, beaten |
¼ cup | Granulated sugar |
¼ cup | Milk |
¼ cup | Light brown sugar |
3 tsp | Ground cinnamon, divided |
4 cup | Vegetable oil |
Popsicle sticks, optional |
Heat the oil in a large stock pot to 350 ºF.
Add the breading, sugar, and 1 teaspoon ground cinnamon to a medium sized mixing bowl. Slowly whisk in the milk.
Dredge each banana piece in the batter and carefully drop into the oil, fry in batches, for 2-3 minutes.
Combine the remaining ground cinnamon and the brown sugar in a small bowl.
Using a slotted metal spoon remove the bananas from the oil to a platter lined with paper towels.
Sprinkle the fried bananas with the cinnamon and sugar and serve on a popsicle stick.
