Directions

  1. Add the ground turkey to a large stockpot over high heat. Use a wooden spoon to break up the turkey and cook for 3-5 minutes. Add the onion to the pot and cook for 2-3 minutes. Add the garlic and cook for 30 seconds more.
  2. Add the soup mix, tomatoes, garbanzo beans, and water to the pot. Stir to combine. Bring the water to a boil, lower the heat and simmer for 25 minutes, stirring occasionally.
  3. Remove the soup from the heat and stir in the parsley.
  4. Add the mozzarella, ricotta, Parmesan, and pepper to a medium sized bowl and stir to combine.
  5. Serve the lasagna soup with a large spoonful of the cheese mixture.
