Directions

  1. In a medium bowl, mix ground beef, egg, ketchup, onion, breadcrumbs, parsley, salt and pepper.
  2. Form about 12 (1½-inch) meatballs; set aside on a small, parchment lined baking sheet cover and refrigerate.
  3. In a large pot, boil 7 cups water, whisk in dry soup mix, tomato paste and diced tomatoes; reduce heat to medium.
  4. Place meatballs evenly into soup mixture, cover and simmer over low heat for 25 minutes or until done, stirring gently.
