Directions

  1. Heat the oil in a large saucepan to 350 °F.
  2. Pour the buttermilk and the beaten eggs into a shallow dish and whisk to combine.
  3. Combine the Shore Lunch® Cornmeal Recipe, flour, baking soda, black pepper, and green onions in a medium sized mixing bowl.
  4. Slowly pour in the buttermilk and eggs into the dry ingredients and stir with a rubber spatula.
  5. Let the mixture rest for 5 minutes.
  6. Carefully drop tablespoon sized balls of batter into the oil, 6-8 at a time. Fry for 6 minutes, turning once until hush puppies are golden brown.
  7. Remove the hush puppies from the oil using a slotted spoon and place onto a paper towel lined plate.
  8. Repeat with the remaining batter.
  9. Plate the hush puppies and sprinkle with the Parmesan cheese and fresh parsley.
