Directions

  1. Place the chicken breasts onto a cutting board and cut each breast into 3 equal pieces.
  2. Pound each chicken slice into ¼ inch pieces.
  3. Place each piece of chicken into a shallow dish and cover with the buttermilk.
  4. Heat the oil in a large saucepan to 350 °F.
  5. Add the Shore Lunch® Chicken Breading Mix to a shallow pan.
  6. Remove the chicken from the buttermilk and dredge each piece into the breading mix.
  7. Carefully add the chicken pieces, in batches, to the oil. Fry for 3-4 minutes each. Repeat with the remaining chicken.
  8. Using long handled tongs remove the chicken from the oil to a plate lined with paper towels.
  9. To assemble the sandwiches place a piece of leaf lettuce onto the bottom of each bun. Add a piece of fried chicken, add the cheese, tomato and the top bun. Serve immediately.
